Know what sparks the light in you. Then use that light to illuminate the world. ~ Oprah Winfrey
Last Friday, I was very excited for the weekend. This Friday has a much more somber vibe. To be honest, I didn’t really want to write a celebrating life post this week. However, I know from my research about gratitude that is the wrong choice. In these difficult moments, finding a way to let gratitude in can make a huge difference. People that have inner peace don’t avoid the ups and downs of life. They are able to reframe their bad days to have a more positive spin. Don’t get me wrong, I’m not trying to down play the grieving process or the various stages of grief.
Comfort food is the food you turn to when you want an edible hug. For me that often involves carbs. As keto becomes more mainstream, there are more keto products coming out on the market. The British Hubby was very excited to find keto cereal that resembled his all time favorite cinnamon toast crunch. Catalina Crunch comes in a variety of flavors. We’re trying the cinnamon toast version first. It uses a plant protein and nothing artificial. I just saw this company also does their own version of keto Oreo like cookies. I must find some to try next! (I think my heart just skipped a beat there.) The cereal was a little sweet when I tried one sans milk, but you don’t notice that once you add the milk or milk alternative. I like to eat it with almond coconut milk. Since this contains protein, a little goes a long ways. It’s not like the sugary cereal many of us ate growing up. This is just what I needed for some Friday comfort food.
