Celebrating Life: Breakfast for Dinner

Breakfast is one of my favorite meals. Sure, it’s safe to say I enjoy eating, but I love a good breakfast anytime of the day. Omelets, bagels, scrambled eggs, bacon, French toast, pancakes, eggs benedict or toast, the possibilities are endless. Oatmeal, waffles, sausages, hash browns, and cereal, I could go on and on. Sometimes you just need a soothing cuppa and slice of toast. Unfortunately, many breakfast items are high in sugar and carbs. That’s probably part of their appeal. Let’s face it sugar is addictive, and it’s hard to break free from it’s hidden possession. In the States, sugar is in almost everything food related especially if you shop at big box chain grocery stores. Let’s celebrate life with a good breakfast in all it’s forms!

This week I realized I could save some of the drier versions of keto bread by creating French toast. I used the French Toast Sticks recipe from Easy Keto Breakfasts as a guide to keep the eggy mixture proportions correct. Really you can use any French toast recipe as long as you pair it with keto friendly bread and sugar-free maple syrup. I used around seven or eight slices of bread which was just perfect for a week of quick breakfasts. They make great sausage breakfast sarnies. Yumm!
